Ingredients

For the Marinade:

  • 1/4 cup extra-virgin olive oil

  • 2 tablespoons lemon juice (freshly squeezed)

  • 1 teaspoon lemon zest

  • 2 garlic cloves, minced (optional)

  • 1 teaspoon dried or fresh oregano

  • 1 teaspoon dried or fresh thyme

  • 1/2 teaspoon dried or fresh rosemary

  • Sea salt and freshly ground black pepper, to taste.


For the Chicken:

  • 4 boneless, skinless chicken breasts.

  • Fresh parsley, chopped (for garnish)

Preparation

  1. Prepare the Marinade: In a small bowl, whisk together all marinade ingredients until well combined.  


  1. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.


  1. Preheat the Oven: Preheat your oven to 400°F (200°C).


  1. Bake the Chicken: Place the marinated chicken breasts on a baking sheet lined with parchment paper or in a baking dish. Bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (75°C).


  2. Serve: Transfer the cooked chicken to a plate and let it rest for a few minutes. Garnish with freshly chopped parsley before serving
